1. Oats Laddu

Ingredients:

  1. Heat a pan over medium flame, add 2 spoons of ghee.
  2. Fry the halved almonds until golden and set aside.
  3. Roast the oats in the same pan until they turn light golden, then let them cool.
  4. Blend the dates and roasted oats coarsely in a blender.
  5. Mix the blended mixture in a bowl, add honey and the fried almonds, and mix well.
  6. Form the mixture into small or medium-sized laddus, placing a fried almond on top.
  7. Top with a bit more honey and serve.

2. Ragi Modak

Ingredients:

  1. Dry roast the ragi flour with half teaspoon ghee for 5 minutes and set aside.
  2. Dry toast the nuts, poppy seeds, and coconut separately.
  3. Heat water and add dates and pureed raisins, cooking until thickened.
  4. In another pan, boil water with crushed cardamoms and the raisin-date mixture, then add toasted ragi flour.
  5. Grind the almonds and poppy seeds coarsely, add to the pan, and cook for 3-4 minutes. Mix in the Stevia or honey.
  6. Grease a plate with ghee, spread the mixture, and let it cool before kneading.
  7. Shape into modaks using a mould and steam for 10-12 minutes.

3. Dry Fruit & Honey Burfi

  1. Heat ghee and sauté the fig paste for a minute.
  2. Add chopped dates, mix well, and cook for 2 minutes.
  3. Stir in the chopped nuts and cardamom powder, cooking for another minute.
  4. Let the mixture cool slightly before adding honey.
  5. Line a tray with greased butter paper, pour in the mixture, and level it with a spatula.
  6. Chill for 20-30 minutes, then cut into desired shapes.
