Eco-Friendly Ganesh Chaturthi Sweet Recipes
As we gear up to celebrate Ganesh Chaturthi, let's embrace the spirit of eco-friendliness and health with these delicious, natural sweet recipes.
1. Oats Laddu
Ingredients:
- 1 cup oats
- 9 dates (deseeded and halved)
- 2 spoons Nirvana Organic Badri Cow Ghee
- 2 ½ spoons Nirvana Organic Honey
- 11 fried almonds (halved)
Instructions:
- Heat a pan over medium flame, add 2 spoons of ghee.
- Fry the halved almonds until golden and set aside.
- Roast the oats in the same pan until they turn light golden, then let them cool.
- Blend the dates and roasted oats coarsely in a blender.
- Mix the blended mixture in a bowl, add honey and the fried almonds, and mix well.
- Form the mixture into small or medium-sized laddus, placing a fried almond on top.
- Top with a bit more honey and serve.
2. Ragi Modak
Ingredients:
- 120 gm Nirvana Organic Ragi Flour
- 25 gm dates (deseeded)
- 10 gm poppy seeds
- 10 gm almonds
- 4 green cardamoms
- 10 gm raisins
- 5 tsp Nirvana Organic Honey and Stevia mix
- 40 gm dry coconut
- 2 tsp Nirvana Organic Badri Cow Ghee
- 120 ml water
Method:
- Dry roast the ragi flour with half teaspoon ghee for 5 minutes and set aside.
- Dry toast the nuts, poppy seeds, and coconut separately.
- Heat water and add dates and pureed raisins, cooking until thickened.
- In another pan, boil water with crushed cardamoms and the raisin-date mixture, then add toasted ragi flour.
- Grind the almonds and poppy seeds coarsely, add to the pan, and cook for 3-4 minutes. Mix in the Stevia or honey.
- Grease a plate with ghee, spread the mixture, and let it cool before kneading.
- Shape into modaks using a mould and steam for 10-12 minutes.
3. Dry Fruit & Honey Burfi
Ingredients:
- 1 ½ cups dried figs (soaked and ground to a paste)
- 1 cup dates (finely chopped)
- ⅓ cup each of chopped almonds, cashews, walnuts, pistachios, and raisins
- 2/3 tbsp Nirvana Organic Forest Honey
- ½ tsp cardamom powder
- 1 tbsp Nirvana Organic Badri Cow Ghee
Method:
- Heat ghee and sauté the fig paste for a minute.
- Add chopped dates, mix well, and cook for 2 minutes.
- Stir in the chopped nuts and cardamom powder, cooking for another minute.
- Let the mixture cool slightly before adding honey.
- Line a tray with greased butter paper, pour in the mixture, and level it with a spatula.
- Chill for 20-30 minutes, then cut into desired shapes.
